Reheating Instructions

Reheating Instructions

Please keep in mind that oven temperatures will vary and all items should not go into the oven straight from the refrigerator; allow to sit on the counter for 15 – 20 minutes.   

Breakfast Items

Bagel Bombs – Wrap in a paper towel and if frozen microwave on high for 1 minute and 15 seconds, if thawed microwave on high for 35 – 45 seconds.

Frittatas – Place in pre-heated oven @ 325° for 12 – 15 minutes covered with foil; can be re-heated in microwave on a low temp (power 3 or 4) for 30 seconds.

Breakfast Strata and Migas Strata – Place in pre-heated oven @ 350° for 20 – 25 minutes covered with foil.

Can be re-heated in the microwave for 1 minute, covered with a damp paper towel.

French Toast Strata – Place in pre-heated oven @ 350° for 15 minutes covered and then 10 – 15 minutes uncovered. Should not be re-heated in microwave

Cranberry Walnut Coffee Cake with Streusel Topping – No re-heating necessary

Bacon – Place in oven pre-heated at 350° on a foil lined tray for 5 – 10 minutes.  Can be microwaved for 20 seconds at a time on a microwave safe plate with paper towels underneath and on top of bacon

Appetizers

Queso Blanco with Housemade Tostada Chips – Place in microwavable dish and microwave/stir in 30 second intervals.

Bacon-wrapped Shrimp – Place in pre-heated oven @ 350° for 3 – 4 minutes, turning on the opposite side for an additional 2 – 3 minutes.

Smoked Brisket Quesadilla – Heat a skillet over medium-high heat, spray pan with oil or add a teaspoon of oil and spread in the pan, add quesadilla to the pan and cook for approximately 1 minute or until the tortilla is golden brown and cheese is melting, then carefully turn over towards the folded side of the quesadilla to prevent cheese from spilling out and cook for an additional minute until the other side is golden brown.

Dinners

Braised Beef Short Ribs & Creamy Polenta- Place in pre-heated oven @ 350° for 18 – 20 minutes, covered with foil.

Buttered Noodles & Brussels Sprouts – Place in pre-heated oven @ 350° for 10 – 12 minutes, covered with foil.

Meatloaf and Mashed Potatoes – Place in pre-heated oven @ 350° for 20 – 25 minutes, covered with foil.

Carrots – Place in pre-heated oven @ 350° for 6 – 8 minutes covered.

King Ranch Casserole – Place in pre-heated oven @ 350° for 20 – 25 minutes, covered with foil.

Black Beans – Place in pre-heated oven @ 350° for 10 – 12 minutes, covered with foil.

Pork Tenderloin – Place in pre-heated oven @ 350° for 8 – 12 minutes covered.

Allow meat to rest for 5 minutes before slicing.  Serve with Cider Reduction.

Mac & Cheese – Place in pre-heated oven @ 350° for 20 – 25 minutes, covered with foil.

Black-eyed Peas & Smoked Beets – Place in pre-heated oven @ 350° for 10 – 12 minutes, covered with foil. Then drizzle crema over beets.

Shrimp & Grits – Place in pre-heated @ 350° covered with foil for 10 – 12 minutes.  Remove from oven and add shrimp and tabasco butter.  Re-cover in foil and place back in oven for 6 – 8 minutes.

Blanched Green Beans – Should be served at room temperature.

 

Chicken Piccata – Place in pre-heated oven @ 350° for 10 – 14 minutes uncovered. Add sauce and place back in oven for 5 additional with oven turned off.

Mac & Cheese – Place in pre-heated oven @ 350° for 20 – 25 minutes, covered with foil.

Roasted Asparagus – Place in pre-heated oven @ 350° for 4 – 6 minutes uncovered.

Beef Medallion – Remove foil & demi-glace from pan, pour sauce over beef and place in pre-heated oven @ 400° for 7 -9 minutes for medium rare, thermometer should read 125 – 130 degrees; For medium to medium well allow to cook an additional 4 – 6 minutes, thermometer should read 140 – 150 degrees; Allow meat to rest for 5 minutes on the counter and temp will rise 5 more degrees.

Scalloped Potatoes – Place in pre-heated oven @ 350° for 20 – 25 minutes, covered with foil.

Brussels Sprouts – Place in pre-heated oven @ 350° for 10 – 12 minutes covered.

Cilantro Lime-Beurre Blanc – Spoon on top of fish or beef a couple of minutes before removing from the oven to eat.

Carne Asada, Adobo Pork and Black Bean Refrito – Place in pre-heated oven @ 350 for 10 – 12 minutes covered.

New Year’s Meal Reheating Instructions

Please keep in mind that oven temperatures will vary and items should not go into the oven straight from the refrigerator; allow dishes to sit out for 30 – 45 minutes before going into the oven. 

 

Cinnamon Roll – Warm in the preheated oven @ 300° for 5 – 7 minutes or microwave for 20 – 35 seconds.

Pigs in a Blanket – Place in preheated oven @ 300° for 6 – 8 minutes or microwave for 30 – 45 seconds.

Pancakes – Place in oven at 350° with pancakes in a single layer on a sheet pan covered with foil and heat in oven for 8 – 10 minutes.

Spinach & Artichoke Dip / Queso Blanco – Microwave in 30 second intervals until bubbling, stirring in between intervals.

Lump Crab Cakes – Place in pre-heated oven @ 350° for 6 – 8 minutes uncovered; top with Lemon Aioli.

Prosciutto wrapped Dates – Place in pre-heated oven @ 375° for 10 – 12 minutes uncovered.

Braised Beef Short Ribs on Parmesan Polenta Cakes – Place in pre-heated oven @ 350° for 10 – 12 minutes covered.

Glazed Ham – Ham is fully cooked and brushed with glaze.  Finish in pre-heated oven @ 375° for 25 – 30 minutes, covered, then baste with juices and place back in oven for an additional 5 – 8 minutes uncovered to allow glaze to crisp. Serve with Rosemary Apricot Chutney.

Pork Tenderloin – Place in pre-heated oven @ 350° for 8 – 12 minutes covered.  Allow meat to rest for 5 minutes before slicing.

Shrimp & Grits – Place in pre-heated @ 350° covered with foil for 14 – 16 minutes.  Remove from oven and add shrimp and tabasco butter.  Re-cover in foil and place back in oven for 6 – 8 minutes

Beef Tenderloin Filet – Place in pre-heated oven @ 400° for 7 -9 minutes for medium rare, if using a thermometer, it should read 125 – 130 degrees; For medium to medium well allow to cook an additional 4 – 6 minutes, thermometer should read 140 – 150 degrees; Top with Compound Butter and allow meat to rest for 5 minutes before serving and temp will rise 5 more degrees.

Braised Collard Greens & Black-eyed Peas – Pour into saucepan and place on stovetop burner set to medium heat until dish reaches desired temperature, approximately 10 – 12 minutes, stirring occasionally.

Basmati Rice – Place in microwave covered with a damp paper towel and microwave for 30 – 45 seconds.

Mac n’ Cheese, Mashed Potatoes, & Scalloped Potatoes – Place in pre-heated oven @ 350° for 20 – 25 minutes, covered.

Southern Corn Muffins – Place in pre-heated oven @ 350° for 4 – 6 minutes uncovered.
